Ingredients

  • 1 small onion (sliced)
  • 1/2 cup capsicum (sliced)
  • 1/2 cup corn (boiled)
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • Salt to taste
  • 1 tbsp oil

For Assembly:

  • Large tortilla wraps
  • Mint chutney or vegan mayo
  • Fresh coriander leaves
  • Lemon juice


Preparation

  1. Cook the Rice
    Wash and soak the rice for 15 – 20 minutes. Heat oil, add jeera, then add rice and sauté lightly. Add water and salt, cook until fluffy and separate.
  2. Prepare the Filling
    Heat oil in a pan. Add onions and sauté until soft. Add ginger-garlic paste, then toss in capsicum and corn. Add cooked rajma/chole and spices. Cook for 5 – 7 minutes until everything is well combined.
  3. Flavor Boost
    Add a squeeze of lemon juice and fresh coriander for a fresh, tangy touch.


Steps to Assemble the Burrito

  1. Warm the tortilla slightly.
  2. Spread mint chutney or vegan mayo in the center.
  3. Add a layer of jeera rice.
