Christmas Rice

It’s that time of year again, yep, it’s Christmas time, our favorite season! This momentous occasion necessitates unique Pragti Rice dishes. Your friends and family will absolutely love you for making this Christmas rice and saving them from having to eat yet another nut bake. This Christmas meal is undoubtedly filling, with a variety of textures and flavors to match.

INGREDIENTS
•  500g parboiled Pragti rice
•  6 cups vegetable stock
•  300g fine green beans, cut into 2.5cm (1in) pieces
•  2 onions, finely chopped
•  2 tbsp vegetable oil
•  1 tsp mixed spice
•  100g pecan halves
•  100g cashews, roasted and salted
•  100g dried cranberries
•  1 pomegranate, seeds only
•  4 tbsp flat-leaf parsley, washed and chopped

DIRECTIONS
•  Cook the beans for 10 minutes or until cooked in salted water. Drain the water and set it aside to cool.
•  Next, sauté the onions in the oil in a large casserole dish until they are browned and softened.
•  Stir in the beans, rice, and combine spices with the onions.
•  Combine the pecans, cashews, and cranberries in a mixing bowl.
•  Garnish with pomegranate seeds and parsley before serving.
•  And voila, your dish is ready!

NOTES
Begin by combining all of the ingredients for this Christmas rice in a large mixing bowl. If you’re looking for a low-carb side dish, go light on the rice and big on the veggies and almonds. However, because it is parboiled rice, the rice itself is a healthier alternative.

You’ll enjoy the texture of the rice, and when you bite into it, it’ll pop in your mouth and give you the finest rice flavor you’ve ever had. ‘Excellent source of protein. Pecans and cashews are high in excellent fats and oils, which are good for the body and fill you up. Almonds, macadamia nuts, chestnuts, or even pistachios can be used in place of these nuts. Use unsalted, raw cashews for a healthier option.

This Christmas rice pairs well with mixed spice, which is a blend of nutmeg, cinnamon, and cloves. You can use a lot of it or just a little bit. You’re in command!

We suggest adding dried cranberries into the rice and sprinkled fresh pomegranate seeds on top of the Christmas rice for the fruit. This might be dried apples, apricots, raisins, or figs.
