Winter Rice Salad Using Pragati Parboiled Rice

We’ve all been there when we return home from work, perhaps after going to the gym, or when we have to make lunch for the next day in the evening; it can seem daunting at times, especially if you’re exhausted and don’t want to spend a lot of time cooking. At the very same time, because ready-to-eat soups and dinners are high in sugar, additives, and preservatives, you, or someone else in your family may not enjoy them. When you’re feeling all cozy and don’t want to get out of bed and make a five-course dinner, but you know you can’t order food from outside every day, winter can have this impact on us.

In that case, Pragti Rice has you covered; we’ve identified some fantastic dishes for you to try this winter season that is both delicious and simple to prepare. The preparation time for this simple meal is quite minimum once you have all of the ingredients, but we promise a fantastic flavor and a delight for your palate (and tummy!). We’ve already discovered a lot of winter rice salads; however, in this case, the wild mushrooms make all the difference, adding an earthy taste that elevates the meal to new heights. Have fun with it!

Ingredients for 2 persons (approximately):
– 250g non-basmati Pragti rice
– 50g green peas
– One carrot
– 50g cauliflower
– 50g boiled corn
– 100g wild mushrooms – salt, pepper,

Extra virgin olive oil
Time: 20-25 mins!
– Prepare the non-basmati rice by boiling it, but do not overcook it because it will continue cooking when added to the veggies at the end.
– Slice the carrot and cauliflower into tiny pieces in the meanwhile. Larger chunks of mushroom should be chopped.
– Pour some extra virgin olive oil in a frying pan, then add the peas, wild mushrooms, corn, sliced carrot, and cauliflower and cook for 5-6 minutes. When the veggies are almost done, season to taste with salt.
– Once the rice and veggies are both cooked, combine them in a mixing bowl and garnish with black pepper and extra virgin olive oil. Warm food is best.

Notes:
– If you like a more firm and crunchy texture, then this parboiled rice is just the one for you, you will enjoy every bit of it.
– Other mushrooms can be used (e.g., Champignons). If not fresh, frozen packages of wild ones are occasionally available. Look for Porcini Mushrooms in the mixture. Their taste is so strong and earthy that it will completely transform the meal and will make a spectacular winter meal.
– Any of the greens in this dish can be replaced with different vegetables. If you wish to add potatoes, go ahead, although the majority of people avoid doing so in this dish because the rice already serves a purpose.
– You may use pre-cooked rice if you’re Very lazy. It’s not as solid as it should be since it overcooks in the microwave, but it’s a decent compromise.
– If you add the parmesan on top, it will serve as a major attraction, but if you don’t, it won’t make much of a difference.
